This salad takes under 10 minutes and lets your microgreens shine. Use a mix—micro spinach, pea shoots, radish—or pick one variety. The dressing is light so the greens stay the star.

Ingredients

  • 50–100g microgreens (any mix)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper
  • Optional: shaved parmesan, nuts, avocado

Method

  1. Rinse microgreens gently and pat dry.
  2. Whisk oil, lemon, salt, and pepper in a small bowl.
  3. Toss microgreens with dressing. Top with parmesan or nuts if you like.
