This salad takes under 10 minutes and lets your microgreens shine. Use a mix—micro spinach, pea shoots, radish—or pick one variety. The dressing is light so the greens stay the star.
Ingredients
- 50–100g microgreens (any mix)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
- Optional: shaved parmesan, nuts, avocado
Method
- Rinse microgreens gently and pat dry.
- Whisk oil, lemon, salt, and pepper in a small bowl.
- Toss microgreens with dressing. Top with parmesan or nuts if you like.
